Lamb is definitely a favourite of the British household. We source the majority of our lamb from Oxfordshire, Berkshire and Gloucestershire. However we sometimes use suppliers from as far away as New Zealand because, depending on the season, it may be better than UK lamb. Altogether, about 5% of our lamb comes from New Zealand.

The best time for UK lamb is from April until October from October onwards, the lamb gets bigger and older. During this time we try to buy small ones (about 20kg) because we know the texture and flavour will be better.
